SANTA & D’SAS – HENTY PINOT GRIS 2016
The Santa & D’Sas approach with the Ampersand Series of wines is to harness the strength and characteristics of each region to create varietal expressive wines. Sourced from the mature, cold-climate Doeven Vineyard planted in 1994 in the far South-West corner of Victoria, this Henty Pinot Gris is a opulent expression of finesse, power and structure. Parcels of Pinot Gris were chosen for their flavour intensity, expression of vineyard character and mineral acidity. Traditional winemaking techniques were used including wild fermentation in older French oak followed by a period of maturation on lees. This Pinot Gris will age beautifully over the next 5 — 8 years.

VINEYARD REGION
Fruit for the this Pinot Gris is 100% sourced from the Doeven Vineyard, Drumborg in the Henty Wine Region.

VINTAGE CONDITIONS
After a dry winter in 2015, the spring leading into 2016 was relatively mild. The season was relatively cool in December and then blossomed into a sunny and warm summer which continued well into March. The Summer temperature was above average, but the sunshine hours were truly atypical. The vines progressed steadily through the season but ripened rapidly, spurred on by the sunshine hours.

100% Pinot Gris

MATURATION
This wine was slowly wild fermented in a combination of older oak— barriques and puncheon and matured on lees for 5 months before bottling.

COLOUR
Pale straw with green hues.

NOSE
Aromas of quince, pear and citrus blossom.

PALATE
The palate shows nashi pears, orange rind, and lemon meringue with integrated mid-palate weight and texture. The vineyard’s trademark crunchy acid and minerality drives the palate and steers the opulent fruit to the finish line.
