SANTA & D’SAS – HENTY RIESLING 2016
The Santa & D’Sas approach with the Ampersand Series of wines is to harness the strength and characteristics of each region to create varietal expressive wines. Sourced from the mature, cold-climate Doeven Vineyard planted in 1994 in the far South-West corner of Victoria, this Henty Riesling is a pure expression of elegance, structure and poise. Parcels of Riesling were chosen for their flavour intensity, expression of vineyard character and mineral acidity. Traditional winemaking techniques were used including cool tank fermentation followed by a period of maturation on lees. Built for the long haul this Riesling will age gracefully over the next 15 — 20 years.

VINEYARD REGION
Fruit for the this Riesling is 100% sourced from the Doeven Vineyard, Drumborg in the Henty Wine Region.

VINTAGE CONDITIONS
After a dry winter in 2015, the spring leading into 2016 was relatively mild. The season was relatively cool in December and then blossomed into a sunny and warm summer which continued well into March. The Summer temperature was above average, but the sunshine hours were truly atypical. The vines progressed steadily through the season but ripened rapidly, spurred on by the sunshine hours.

100% Riesling

MATURATION
This wine was cold fermented in stainless steel and matured on lees for 4 months before bottling.

COLOUR
Pale straw with green hues.

NOSE
Aromas of bright and lifted white flowers, musk, citrus combined with fresh cut limes.

PALATE
The palate shows kaffir lime & lemon sorbet supported with a delicate texture along the palate. Fine-boned mineral acid pulls the structure together with a sherbet like finish to produce a wine with balance, delicacy and fine length.
